100 Ways to Make Borscht

100 Ways to Make Borscht is an experiential, performance, photography, cooking, and writing project in which I’ve undertaken the task of making borscht from as many different recipes as I can find. The recipes come from both locally and internationally published cookbooks, as well as from sources online and from friends and members of the community. The making of each recipe is documented through photography and notes on my experience cooking the dish. Some of these experiments will also be served at dinners, during which those interested will be invited over for a bowl of borscht.

Commonly found in Eastern European culinary traditions, borscht is both a dividing and uniting dish. No two borscht recipes are the same, and this project aims to document the differences as well as create a visual and textual catalogue of the many types. On a more personal level, 100 Ways is also a way for me to connect to my Ukrainian and Polish heritage and to learn more about one of the region’s most beloved dishes.
